My family actually ate and liked liver!

Yes, my husband and teenage daughter ate liver and liked it. The family is constantly picking on me about hiding "nasty stuff" in their food. Of course, I get away with it because it usually ends up being pretty tasty.

Liver is the super food I am trying to include into our diets on a regular basis. Why? Because it is full of good nutrients such as -

  • B12, B2 (riboflavin), B3 (niacin), B6 (pyridoxine), biotin and folic acid
  • Minerals- iron, zinc, copper, chromium, selenium. potassium, phosphorus and sodium

I try to get as many of our nutrients from food when I can. Mainly because the hubs and daughter are notorious about forgetting to take their supplements. Getting nutrients from food also allows the amount of supplements to be kept to a minimum. And since I am eating to heal a poorly functioning thyroid, liver is one of the super foods that I go to for energy.
